Do you take your coffee black? Appreciate unique brewing methods? Then the latest Spaceworks Tacoma creative enterprise may be right up your alley.
Pop Up Coffee, founded by Jason Atherton and operated by Director of Coffee Stacy Stevens, is now serving “artfully crafted brewed black coffee drinks through a variety of unique brew methods,” including pour-over and aeropress. No lattes, macchiatos, cappuccinos or mochas here. They don't even encourage milk and sugar.
What makes Pop Up Coffee interesting though is it's business model. Because it's focused on simple brews, and doesn't need a hulking espresso machine or even a fridge, the company can open up in locations that would not be able to sustain a full-service cafe.
Pop Up Coffee will be open inside the Children's Museum (1501 Pacific Avenue) daily from 8 a.m. to noon, in Theare on the Square (915 Broadway) Thursdays 8 a.m. to 2 p.m. and in Tacoma Mountaineers (2302 North 30th Street) Monday, Wednesday, Thursday, Friday from 6:30 to 11:30 a.m.
